Cacao Fireballs (makes 25)

  • ½ cup almond flour
  • ½ cup coconut crystals (low glycemic sugar)
  • ¼ cup raw cacao powder  (plain cocoa is an option)
  • ¼ cup virgin coconut oil
  • ½ tsp cinnamon & ¼  tsp nutmeg
  • ¼ tsp celtic salt & ¼  tsp cayenne pepper
  • ½ tsp orange extract & ½  tsp almond extract
  • 2 drops of liquid stevia extract
  • 1 tbsp raw almond butter
  • 2 or 3 tbsp coconut flour (powder) or ground nuts, etc.

 

Mix well in a medium bowl: almond flour, cacao powder, cayenne powder, cinnamon, nutmeg & salt and set aside.  In a small metal cup or pan melt coconut oil on low heat, then add the stevia, almond & orange extracts and stir well.  Into this add the coconut sugar, stir well, then stir in 1 tbsp of almond butter.  Add this to the flour mix and incorporate till smooth.  Using a teaspoon, scoop out and compress into a semi marble shape then drop into a small square container with a few tbsp of coconut flour and shake vigorously back & forth till coated & round.  Place on a flat surface, freeze 10 minutes.  Store in frig in an airtight container & serve cold.

Options:  If substituting coconut flour for the almond flour, add 2 tbsp of any nut butter.  Forming a ball will be challenging  but it can be done if you compress it tightly.

Note: Raw cacao is much richer in phytochemicals than common roasted chocolate, so be conservative with children.   

Calm Brain Tonic (makes 4x1 cup servings)

  • 1 cup of strong reishi-ashwagangha tea
  • 2 cups of pumpkin seed milk (soak 1/3 cup seeds overnight, drain, blend w/ spring water as desired)
  • 6-8 oz coconut water
  • 2 tbsp lecithin granules
  • 2 tbsp raw cacao powder
  • 1 tbsp coconut butter
  • 1 tsp vanilla bean powder or extract
  • 1 tsp mucuna powder
  • 3 dates
  • 6 drops of liquid stevia
  • sea salt to taste

 

Blend solids with small amount of liquid, then add the rest of the liquid.
